This Moroccan inspired fish is healthful, easy to prepare and absolutely delicious. We recommend using it to prepare tilapia or salmon, but think that any fish would work well with this sauce.
Ingredients
1 Tablespoon olive oil
1 cup peppers, chopped, any assortment (red, green, or yellow)
1 small onion, chopped
1 garlic clove, finely chopped
1 jar Mina Shakshuka Sauce
4 tilapia or salmon filets, approximately 1/3-1/4 lb. each
1 Tablespoon capers
Directions
Heat a large pan over medium-high heat and add olive oil. If you have a cast iron pan this is the time to use it
Add chopped peppers and onions. Saute until the onion is translucent and the peppers are softened. Add the garlic and capers, and continue sautéing for about 1 minute.
Push the vegetables to the sides of the pan and add the fish in the center.
Pour in the whole jar of sauce and cook covered for 3 minutes or so…removes cover and cook until fish is done and flaky. About 5-6 minutes more.
Notes
Serve with rice, couscous or mashed potatoes.
